Ingredients
  

  • 2 pounds boneless chicken thighs skinless and unseasoned
  • 1 cup brown rice uncooked
  • 1 cup carrots chopped
  • 3 cups low sodium chicken broth onion and garlic free

Method
 

  1. Add the chicken thighs, brown rice, and chopped carrots to the crockpot.
  2. Pour the chicken broth over the ingredients, making sure the rice is mostly submerged.
  3. Cover and cook on low until the chicken is fully cooked, the rice is tender, and the carrots are soft.
  4. Carefully remove the chicken from the crockpot and shred it into small, bite sized pieces.
  5. Return the shredded chicken to the crockpot and stir everything together.
  6. Allow the mixture to cool completely before serving.

  1. Use plain chicken and broth without onion, garlic, heavy seasoning, or excessive sodium.
