- Preheat the oven to 350°F (175°C) and lightly grease a 12 cup muffin tin or line it with silicone liners.
- Cook the ground beef in a skillet over medium heat until completely cooked through. Do not add salt, garlic, onion, seasoning, or spices.
- Drain any excess fat from the cooked beef and allow it to cool slightly.
- Finely grate the carrot and add it to a mixing bowl.
- Add the cooked ground beef, egg, oat flour, and pumpkin puree to the bowl.
- Mix until all of the ingredients are evenly combined and a thick mixture forms.
- Divide the mixture evenly between the prepared muffin cups, filling each one about two thirds full.
- Gently press the mixture into the cups so the muffins hold their shape while baking.
- Bake for approximately 18 to 20 minutes, or until the muffins are firm and the beef is completely cooked.
- Remove from the oven and allow the muffins to cool in the tin for a few minutes.
- Transfer the muffins to a wire rack and allow them to cool completely before serving.
