Method
 

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Wash and finely grate the carrot. If the pieces are large, chop them into smaller pieces so they blend easily into the batter.
  3. Add the oat flour, pumpkin puree, grated carrot, and egg to a mixing bowl.
  4. Stir the ingredients together until evenly combined.
  5. Add the water gradually and mix until you have a thick but spoonable batter.
  6. Lightly grease the waffle iron if needed according to the manufacturer's instructions.
  7. Spoon a small amount of batter into the waffle iron without overfilling it.
  8. Close the waffle iron and cook for approximately 3 to 5 minutes, or until the waffles are firm and lightly golden.
  9. Carefully remove the waffles and place them on a wire rack.
  10. Allow the waffles to cool completely before serving.
